 One pot Meatball Mac n Cheese






Ingredients.



1 onion
2 cloves garlic (grated)
1tbs tomato puree
300g small pasta
400ml hot chicken stock
120g cheese- I used a mix of cheddar, Red Leicester and mozzarella, grated
Season to taste
Parsley and chili flakes to garnish (optional)



Method.



Start by frying the meatballs until it’s crispy and then add in the onions. 

Once the onions are soft add in the garlic and tomato puree and cook for a minute.
 
Once the meatballs are cooked remove from the pan and set aside. Add in the uncooked pasta and give it a good mix, then add in the stock and milk. 

Cook this until most of the liquid has been absorbed and you’re left with a creamy sauce. Don’t boil the milk as this will make it split.

 Add the cooked meatballs back in and half of the cheese and mix until the cheese has melted, then season to taste. 

Add more liquid if needed. Sprinkle over the remaining cheese and pop under the grill until golden and bubbling. Garnish, Serve, and enjoy.
