Cheesy Red Pesto Beef Pasta

Ingredients
300g pasta
500g minced beef - I used 5% fat
Salt and pepper
1 onion (finely diced)
3tsp garlic puree, or 3 cloves garlic.
1tbs tomato purée
4tbs red pesto - I used reduced fat
400ml beef or chicken stock
120g cheese - I used cheddar and mozzarella
Parsley and chilli flakes to garnish
Method.
Pop your pasta on to boil with a good amount of salt.
Meanwhile season and cook the beef until browned then add in the onion.
Cook until the onion is soft then add in the garlic, tomato purée, and the pesto and cook for a minute or so. Then add the stock and cream cheese, turn up the heat a little, and allow to reduce down. Once the pasta is done, drain and pop into the sauce adding a little pasta water. Give it a good mix top it with grated cheese and pop it under the grill or in the oven until golden and bubbling. Garnish. Serve and enjoy.
