 BBQ Chicken Mac n Cheese

Ingredients.




300g pasta (uncooked weight)
500g chicken breast
1tbs chicken seasoning
1tbs smoked paprika
1tbs garlic granules
1/2tbs oregano
1tbs tomato puree
2tbs bbq sauce

1 onion (finely diced)
3 peppers (finely diced)
3 tsp. garlic purée (or 3 cloves)
2 tbsp. plain flour
200 ml of hot chicken stock
300 ml of milk, warmed
1 tsp. mustard;  (optional)
.120g cheese: I used a mix of extra mature cheddar and mozzarella.
Season to taste.
Parsley and BBQ sauce to garnish (optional)



Method





Start by seasoning the chicken. Fry the chicken until it’s cooked through and browned, then add in the tomato puree and BBQ sauce. Once it’s mixed, remove it from the pan and set it aside. Add the onions and peppers to the same pan and cook until soft, then add the garlic and cook for a minute or so. Add in the flour and give it a good mix, then add in the stock and milk slowly, bit by bit, stirring continuously until you have a thick sauce. Add in the mustard (optional) and the cheese and mix until the cheese has melted, then add in the cooked pasta and season to taste. Add some pasta water if needed. Add the chicken back in. Garnish, serve and enjoy. Calories- 617Protein- 51.3gSyns: 1 (BBQ sauce), 1 (flour), +HEAIt depends on what sauce you use.
